Living a healthy lifestyle can be something of a task for many. Sometimes we find ourselves trying to think of different ways to make dishes that will satisfy both our cravings and our hunger, often feeling disappointed when they aren’t. Thankfully, gone are the days where salads are seen as the “it” health food that everyone needs to be eating day-in and day-out. Now, the interwebs is riddled with a plethora of healthy, delicious, and colorful meals ranging from vegan to vegetarian (and beyond!) that are guaranteed to hit the spot every time. Check out the three recipes below for three new ideas on how to not only eat like a champ, but feel like one, too!
TB12 Hummus
From Tom Brady’s book The TB12 Method: How to Do What You Love Better and For Longer
TB12 is the health and wellness brand co-founded by Tom Brady and Alex Guerrero and in honor of his recent Super Bowl win has released a limited edition “7” commemorative collection.
Ingredients:
1 1/2 cups cooked chickpeas or 1 (15 oz) can
1-2 medium cloves garlic
2 scallions (white and green parts only) chopped
1/3 cup of goof-quality organic tahini (tahini separates; best to use the tahini paste, oil reserved)
1 lemon, juice + zest
1 teaspoon of Himalayan salt
¼ teaspoon ground cumin
2 tablespoons organic extra virgin olive oil
¼ cup cooking water from the chickpeas, or purified water, adding more if needed
Pinch of smoked paprika
Method:
- Place everything but the oil and water in a food processor. Blend for about a minute, then scrape down the sides with a silicone spatula and blend for another minute or so.
- With the food processor running, add the olive oil, then add the water until the mixture is smooth and well combined, continuing to scrape down the sides as needed.
- Leave the hummus a little creamier than usual, as it will thicken as it cools.
- Store in a glass container with an airtight lid and top with a little more olive oil and a sprinkle of smoked paprika.
Corn Salsa by Vale Food Co.
Ingredients:
4 quart – Corn (Drained)
1 quart – Roma Tomatoes (Diced)
8 ounce – White Onion (Diced)
8 ounce – Lime Juice
8 ounce – Rough Chopped Cilantro
1/2 teaspoon – Red Chili Flakes (optional)
1 tablespoon – Salt & Pepper
Method:
- Drain corn and add to a mixing bowl
- Add all remaining ingredients to the mixing bowl
- Mix well
- Enjoy!
Impossible Chorizo by Vale Food Co.
Ingredients:
8 Ounces of Impossible Ground Beef
1 Tablespoon Blended Oil
1 Tablespoon Diced Onion
1 Tablespoon Diced Tomatoes
1 Tablespoon Minced Garlic
½ Teaspoon Smoked Hot Paprika
½ Teaspoon Nashville Hot Seasoning
½ Teaspoon Salt & Pepper mix
6 Ounces of Marinara Sauce
Method:
- Add oil to a non-stick saute pan
- Add onion, tomato and garlic. Saute for 1 minute
- Add Impossible Beef
- Mix Beef with your vegetables in the pan
- Add seasonings. Mix thoroughly
- Add marinara sauce. Mix thoroughly
- Let sit for one minute. Serve
