Mexican Horchata by NutraMilk

The dairy-free horchata recipe we all need in our receta book

Americanos across the United States have an expressed love for Mexican food. South African comedian and host of The Daily Show, Trevor Noah, even has a joke about how much Americans love tacos (and Mexican food) in his Netflix stand-up special Son of Patricia. He admits to his friend at the time that he had never had a taco, and homeboy almost loses his cabeza. [But back to the point.] One of the foods that Americans most love isn’t even a food at all — it’s a drink. Enter, Mexican horchata.

You’ve probably heard of horchata before, even seen it on a menu or two. But most people don’t really know what horchata is, let alone what it’s made of. At first glance, one may think, that because it is white and creamy looking, that it possesses trace amounts of dairy. Estás equivocado, my friend. The OG horchata is completely dairy-free (lactose intolerants, rejoice!). Now, you’re bound to find iterations of it that carry some sort of dairy (not that it would stop someone with an actual dairy allergy from drinking it), but dairy-free is the way to go, chicas y chicos.

Ingredients

  • 1/3 cup white rice
  • 4 cups water
  • 1 cinnamon stick
  • 1 cup almond milk made with the NutraMilk
  • 4 tbsp. sugar
  • 1 tbsp. vanilla extract
  • 1 tsp cinnamon powder
  • ½ tsp salt
For almond milk
  • 1 cup (150g) almonds
  • 1 quart (946ml) water
  • 1/8 teaspoon Pink Himalayan salt (optional)

Cooking

  • Start by making fresh almond milk with the NutraMilk:
    • Place almonds in the NutraMilk container.
    • Press Butter cycle, set for 7 minutes.
    • Press Start.
    • Add water and replace lid.
    • Press Mix (do not change the default Mix time).
    • Press Start.
    • Press Dispense, open spigot and fill your container with almond milk.
  • Add the rice, one cinnamon stick and one-liter water into a large bowl and leave it on your countertop overnight.
  • The next morning, pour the mixture into the NutraMilk and press Mix for about 2 minutes.
  • Add all other ingredients and Press ¨Mix¨ for about a minute until everything is well combined and sugar is dissolved.
  • Dispense your vegan Horchata into a glass bottle and store it in your fridge for up to one day until you serve it.
